German Potato Salad
INSTRUCTIONS
- Wash potatoes. Fill large pot half way with water. Add salt to water. Use as many potatoes as fits in the pot. Bring to a boil for about an hour.
- Remove potatoes from boiling water and shock them with cold water (this helps the skin come off easier)
- Let potatoes sit and cool
- Make sure bacon is cut into small cubes. Cook bacon.
- Add the chopped onion to cooked bacon grease and sauté. After sautéd, add about a half cup oil.
- Once the potatoes are cool enough to handle, peel potatoes. Put in the fridge to cool some more.
- Once the potatoes are cool enough to stay intact, slice into bowl
- Drizzle the oil/bacon/onion mixture. Stir gently. Add pickle juice (as the vinegar), Fondor, parsley, salt and pepper to taste.
