German Potato Salad

INSTRUCTIONS

  1. Wash potatoes. Fill large pot half way with water. Add salt to water. Use as many potatoes as fits in the pot. Bring to a boil for about an hour.
  2. Remove potatoes from boiling water and shock them with cold water (this helps the skin come off easier)
  3. Let potatoes sit and cool
  4. Make sure bacon is cut into small cubes. Cook bacon.
  5. Add the chopped onion to cooked bacon grease and sauté. After sautéd, add about a half cup oil.
  6. Once the potatoes are cool enough to handle, peel potatoes. Put in the fridge to cool some more.
  7. Once the potatoes are cool enough to stay intact, slice into bowl
  8. Drizzle the oil/bacon/onion mixture. Stir gently. Add pickle juice (as the vinegar), Fondor, parsley, salt and pepper to taste.
